Oven Fries

Oven Fries (for 2)

Ingredients:

3 medium red potatoes, peeled (or not!)
2 tbsp olive oil
S&P to taste
I added basil, but you really couldn't taste it, it's more for the presentation!

Directions:

1. Cut the potatoes as you wish for fries.
2. Put them in a bowl of cold water and let them soak 30 minutes (this removes a lot of the potato starch and helps them to be more crunchy - apparently. Ours didn't crunch up all that much in the oven).
3. Preheat the oven to 400.
4. After the 30 minutes are up, let the fries dry as much as possible and soak up the excess liquid on paper towels.
5. In a bag or bowl, mis up the olive oil and seasonings with the potatoes.
6. Place each fry on the pan so they don't touch and cook 20 minutes.
7. Carefully turn the fries over and cook an additional 20-25 minutes until they're nice and brown.
