Rain's Baked Mac and Cheese
Ingredients:
1/2 box of macaroni (1/2 pound, 2 cups dry)
2 tbsp butter
1 small onion chopped
2 tbsp flour
2 cups milk
1 tsp dry mustard
Pepper to taste
1 small brick of Cheddar (sharp) shredded
10 cut up slices of "fake cheese", I use Velveeta (this is the only time I use fake cheese, but in this recipe it really works), but you can omit the slices and use 1/2 brick of cream cheese instead.
Extra butter and some breadcrumbs
Directions:
1. Preheat oven to 350.
2. Pre-cook the macaroni about 15 minutes in boiling water.
3. Over medium heat, melt the butter and add the onions until they are soft, 3-5 minutes.
4. Stir in the flour and cook for about a minute.
5. Turn down the heat and slowly add the milk, mustard and pepper.
6. Slowly add the cheeses, stirring very often until it's all melted.
7. Combine the mac and cheese in a 2 quart dish, mixing well.
8. In the same pot you melted the cheese, add some extra butter to melt. Combine with breadcrumbs (I use about 2 tbsp butter and 1/2 cup breadcrumbs) until it's all combined and sprinkle on top of the mac and cheese.
9. Bake for 25 minutes and broil for a few minutes to make the crust all crusty!
